Top Plant Based Recipes

Lately I have been getting asked what are some of my favorite plant based meals. So I figured why not make one easy post with some of my current fave meals! I tend to like a super easy meals so most of these are pretty simple.  I normally make one thing for the week and eat it for lunches almost every day.

 

I normally do smoothies for breakfast. I throw frozen mixed berries, banana, either spinach or kale, a little water, flaxseeds and cacao. Makes a yummy smoothie and super filling! If I’m not in the mood for something cold I make apple and cinnamon oatmeal from Trader Joe’s.

 

Like I’ve mentioned in previous posts Pinterest is my go to for recipes.

 

Long before I went plant based we made this meal for some new friends that we had over for dinner that were vegan. I don’t add honey in it and it is still amazing.  Its always good with mango salsa, guacamole or regular salsa. Seriously this is one of my favorite meals! I make it almost once a week.

If you haven’t had “pulled pork” jackfruit. Go to the store and get canned jackfruit now! Trader Joe’s carries this. To me it tastes almost identical to the real thing. This was pretty easy to make and SO delicious!!! This would be so good on so many other things, like pizza, salads or tacos!

Who does not love curry?! I never knew how easy curry was to make. This meal is so quick and easy and extremely tasty!! Sometimes I put tofu in this or just load it up with veggies. With the panang curry paste we got it does have quite the kick. So beware when making your this if you don’t like spicy! I haven’t tried adding more coconut milk yet but I imagine that would tone down the spicy flavor.

This next dish is great for summer time! Who doesn’t love a pasta salad?! Always so refreshing. It also has avocado…do I need to say more?

Here I go again with curry! I love to make this soup and have it for lunch the rest of the week. Your house will smell amazing while the curry cauliflower is cooking. I chop up the cauliflower and throw it in the food processer and then throw the spices on and roast it, the recipe calls for sticking it in the food processor after it has been cooked.

Cowboy Caviar is great as a main dish or with chips! This is always a crowd pleaser at parties! Again super easy meal and you almost always have everything to make this at home.

I love anything with avocado! This salad with avocado dressing is delicious! Like the recipe says to make this vegan just use the whole avocado rather than the yogurt. The dressing was super creamy and delish! The warm sweet potato on this is salad is so good.

Another easy favorite salad is baby spring mix, chickpeas, tomatoes, avocado, roasted sweet potatoes and then olive oil and balsamic glaze on top! This is one of the best salads ever!

 

 

Now for some of my super easy go to meals from Trader Joe’s.  Who else is obsessed with TJ’s?! I love it there. The fact that the store it so small it makes it nice and easy to find everything I need quickly.

 

I have been obsessed with their Stir Fry Cauliflower rice in the frozen section. I get their asian stir fry veggies in the produce section and then throw coconut aminos or soy sauce when it is done cooking. This is a 10 minute meal and so delicious! Also makes for good leftovers.

 

A big pan of roasted veggies is the best!!! I love this because it helps me get a bunch of veggies in and its so good! I love that you can get creative with this! One of my fave combos is- red potatoes, mushrooms, butter nut squash, zucchini and multi colored carrots. Add whatever seasonings you feel like! For that combo I did some olive oil, garlic powder, salt and some seasoning salt. This meal is super filling!

 

You may be seeing a common theme in this post…a lot of them contain avocados. Avocado toast is the craze right now and I have given in. Bread and avocado are 2 of my favorite things in this world. I get the Tuscan sliced bread from TJ’s and their Americas favorite guacamole pack. I toast up 2 slices of bread and slater one packet of the gauc between the two pieces of bread. Also super good to put a tomato on top. I could eat this all day every day.
