As a kid I grew up loving Kraft Mac and Cheese, ask any of my childhood friends and they will tell you whenever they were over we probably had that for dinner. I was obsessed and was kind of a picky eater so my mom would make this for me when I didn’t like what she was making for dinner.
When I went plant based I knew I needed to find a good Mac and cheese that didn’t taste weird. I tried one recipe that used nutritional yeast and roasted red peppers and it wasn’t my favorite. After that it kind of went off my radar and I didn’t experiment anymore until one of my friends told me she made this really good vegan mac, so I knew I had to give it a try! I love when other people have tried something as I know it will probably be good!
After I got my wisdom teeth out I had to eat a soft diet so I knew this was the perfect time to try it. Overall this recipe was super easy! I used vegan cream cheese from Trader Joe’s which is very good and doesn’t taste funny at all! I didn’t have vegan parmesan but I had bought Chao original cheese slices while I was at Whole foods earlier in the week so I used those instead! I used two Chao slices in this. I only made a half batch of this recipe and it made about 2-3 servings. It was so good and creamy! I can’t wait to make this again!
